I was was just given a cumber that size and I also had the brilliant idea of making zucchini muffins....what a disaster! The recipe I found had you squeeze all the moisture out of the zucchini that you grated (makes sense), but then add back in applesauce pineapple juice that made the batter all wet again. They looked good from the outside at least. When am I going to learn not to even bother trying to cook, lol.

A friend of ours just gave us a giant zucchini like that. We had dinner with them a few nights ago, and they had zucchini in their pasta. It was really tasty. \r \r Just cut it into chunks, brush them with olive oil, put them on a cookie sheet and bake for 30-40 minutes. Add them to whatever type of pasta sauce you like.

my wife has a great recipe for zucchini bread ill pm it to you. she used to make it for me to bring to chicago when i roomed with mr white and he loved it!
