Wedneesday...

Well, let me just start off with this.

When I got home last night with my dog, and opened up the door to the Tundra to let her out, she jumped down as normal.  What wasn't normal is that from that point on she wouldn't put any weight on her right hind leg.  This had me understandably worried, so we got ourselves together and headed to the vets.

My lil girl has a broken leg.  Not terribly broken and not in a area that they can put into a cast easily.  Basically, we can let her do what she wants, if it hurts..she won't do it.  Being the dotting father that I am however, I took today off from work to stay with her to make sure she is ok.  I don't want her running around with my parents dogs today like she normally would.  So we are just chilling here.   I'm sitting on the couch with the new laptop watching John Wayne in Hondo and my pup has a nice rawhide bone she is dillegantly chewing on.  I gave her some dog aspirin for pain and she seems good.  I just want her to rest it for a while before going back to her "routine".

On to other things...

I finished the original Condemned this morning and I am sad that I didn't play it when I had it the first time.  What a good game.  I have to run back and get some of the easier achievements...asides from the Melee achievements, I need to replay it with the second option for the ending and I need to pick up a few more metal plaques and the only birds I didn't get all of were in the first level when I was still trying to figure out the damn controls.   I am looking forward to getting to GS tonight to get Condemned 2:  Bloodshot, I had it on pre-order and actually only just saw the preview video this morning thanks to Kurupt posting it in the ClaNarchy forums.  I am very excited to play this one through now.

Kane and Lynch?  Fuck that, fuck the fucking dump druck in its fucking dumper back.   That game is getting returned to GameFly this afternoon to make room for something that is better.  I am sad, I actually did enjoy the game, but FFS, that Dump truck part is bullshit and killed the fucking game for me.

Food:

I found a recipe on TV the other day that I tried and really liked, I altered it a little bit to suit my own personal tastes a bunch and it came out really good.  I have changed its official name from Chimichitos to Baine's Chimichitos...  Basically its a Chimichanga, but not fried.  Here's the gist.

Take a pre-cooked over roasted chicken, take off its skin and shred the white meat of the breast.  Do this while the chicken is warm otherwise the chicken won't shread right.    Get a large skillet warmed up hot, once this is heated up, add chicken, some lime juice, refried beans, yellow cooked rice, cheese (I like the mexican mixes), add a LITTLE taco seasoning, mx and heat it up to a nice thick paste.  Add some enchilada sauce, mild or hot..doesn't matter.  Once this is all mixed together, reduce the heat to low and cover..this will let the cheese melt nice.  Once that is going, the best thing to do is warm up some extra enchalada sauce in a small sauce pan.   Take the mix and dish out a moderate amount of the mix into the middle of a 8" Flour tortilla shell, fold this over into a nice little pack.   Put on a lightly greased oven tray bottom down.  lightly coat the top of them with a little oil.  Put in the oven at 350 degrees.  If it doesn't brown properly then put them under the broiler for a few minutes to get the shell crispy.     Once thats done, put it on a plate,sprinkle some more cheese on them.  Pour some of the warmed enchillada sauce on them and top with some sour cream.

My wife laughs because the only thing I seem to be able to cook well, and by that she means make up as I go along is chicken...but c'mon...who can't.
