It's rhubarb season!!

It is the time of year that we get our rhubarb for the rest of the year.  Yesterday Dastard and SK1 (stepkid 1) went to the local market and bought 55 pounds.  Yes, that sounds like a lot but we split that with his mother.  Tonight I get the *cough* honor of washing and cutting the stalks up for freezing.  Once a month I will pull out a bad and make this wonderous recipe that I thought I would share.  FYI, I normally double the crumb part so there is more to put on top.  I have to be careful not to eat a lot of this because it will mess with my levels of coumadin.  Rhubarb will actually drop my prothrombin time (blood clots faster) as do some other types of foods.  But, with a little whipped cream or ice cream this is great stuff.  I will also add a little orange zest to the top before adding the rest of the crumb topping.  It adds a little sweetness without overpowering the rest of the flavors.


Rhubarb Crunch
 
1 c. flour            3/4c oatmeal            1t cinnamon
1 c brn sugar firmly packed            1/2 c melted butter
 
Press half of crumbs in to greased pan 13X9, cover with 4 cups of diced rhubarb.
 
Combine:  1 c sugar, 1 c water, lt vanilla, 2T corn starch
 
Cook until thick and clear.  pour over rhubarb.  Top with remaining crumbs.  Bake in a mod oven,  350, for 1 hour.

We downloaded the new Halo 2 maps so the boys can play online while they are here.  That took a little doing but it's completed.  Tonight is clan night so I can play Call of Duty with the guys and the boys can get online and try and find someone to play Halo 2 with.  No, we didn't get Crackdown for them or the Beta and I can't see spending that much money on a Beta.  We will be getting Halo 3 when it comes out.  I really have a generous brother.  He is donating a month of gold so one of the boys can play online while they are here and we don't have to use up the 48 hour pass.  Go Soup!  Love ya, brother.
