Career Change

Here I am 27 years old and I have just decided what I really want to do with my life, I know it took me a while but hey I'm still a kid at heart with ADD...lol[View Image]


I have worked in sales for about nine years, and I will be going back to school come August to start a whole new career.  I have applied to and been accepted to the Texas Culinary Academy in Austin, TX.  I am so excited and nervous at the same time.  This will be the first time I have lived outside of Arkansas since I was 12 and I hope my daughter doesn't have a hard time adjusting to a new place.  She has lived in the same place all her life. 


The distance between Smoke and I will be hard, but we know this is the best thing for me.  I have hated my job and my boss for quite some time, so getting out and doing something I love is the best thing.  I am a lot happier now that I don't work there anymore!  It has been more hard on Smoke than me, because we have worked side by side for so long and now he has to go in everyday without me.


I love to cook and I enjoy creating new dishes and in general I just like to feed people and see them happy![View Image]


It will be hard to live in a town where I don't know anyone, but I think I'll make it.

Yeah, recently I moved from software development to systems engineering (pre-sales tech guy) and its an adjustment, but different.\r \r After doing the same thing for awhile it's nice to feel young again, and by that I mean experiencing and doing stuff for the first time, not being a \"senior\" in the position. Of course, that also means you get a lot of the shit work you used to be able to pawn off, but so be it.\r \r Good luck. Although I've never been to Arkansas I think I can point it out on a map.... :)

Best of luck! We'll try to keep smoke sane on ravencrest. ;)\r \r Distance sucks, but it's better in the long run for y'all. Take Smoke with you as soon as he's traveable. I make up my own words.

Have you ever cooked professionally before? Like on a line in a restaurant? You may want to give that a shot for a few nights before you totally jump in the pool. Cooking for friends and family at home is totally different than cooking professionally. It's hard, grueling, painful work with long, late hours. I did 10 years in food service and they were some of the best of my life, but I couldn't imagine going back to the life with a family. Not trying to be a party pooper...I would feel irresponsible if I didn't say something.\r \r If you want a book to read, check out Tony Bourdain's \"Kitchen Confidential.\" I would say that is pretty even handed account as he taks about the pittfalls as well as the joys.
